Subject: How do you react to a family member insulting you
What are some good one liners I can use when calling them on it?
One time I was sincerely shocked by a comment and just loudly and slowly said WOOOW. She realized she had put her foot in her mouth and began stuttering and trying to talk about sonething else.

Work on growing a thick skin and sociopath tendencies. Nothing can hurt you and they will become afraid of crossing you.

I it general insults or personal ones. If they are insulting a category or group that you happen to be part of (lawyers, Southerners, Christians, poor people) then ignore it - it is just their prejudice.
If it is personal - you are fat, lazy etc... then I would address it right away.

DH works for the federal government. My family likes to complain about how the government spends too much money, government workers are overpaid, they deserve the furloughs, etc.
They're not talking about my husband, though, they're just complaining. I'll listen for a while, and when I've had enough, I'll change the subject or hang up. Seems to work fine for all of us.

I don't think examples are necessary; if you feel you are being insulted, call them out. You can pick up from others' reactions to validate your own feeling about the insults.
Call this person out when an insult is given: simply tell them it was rude what they said. It can be as simple as saying (in a normal tone), 'that wasn't polite,' and change the subject.
If this occurs several more times, and they don't get it, just ignore them. Some people are rude.
