| I actually love hersheys unsweetened cocoa powder for many things. But for fancier concoctions I use valrhona. Got a large container on amazon. |

| King Arthur double dutch dark cocoa. I'm also a fan of their black cocoa (an ingredient in their double dutch cocoa) which I use to substitute a portion of regular cocoa in cakes and cupcakes. |
