You could cook it the same way, but use some mexican spicing. Shred it after it's cooled and then saute the shredded beef to make tacos.

Or, cook it the same way that you would for pot roast, but then shred the beef and use it to make shepherd's pie.

Serious excellent idea. I am going to use some cumin, chili powder, salt and make like a barbacoa from Chipotle. What a super duper idea! Thanks!

Italian pot roast, called brassato. Look for Mario Batelli's recipe. Really good over polenta.

Do this. Use less onion than they call for, and any cheap jar of salsa. I roast the meat overnight, then put the whole thing in the fridge for several hours so the fat solidifies and I can just take it off. My mom has been making this recipe since I was a kid and everyone loves it, and it's EASY. Not "hot" at all.

Beef stew. Cube the roast, cook the meat for an hour or two; smush some garlic, add a few bay leaves, maybe a little herbes de provence, then add tiny new potatoes (or cube up some big ones) carrots, and pearl onions and simmer til the veggies are soft. in the last 15 minutes, dump in a glass of cheap red wine. Serve with fridge biscuits.
