Why do you need to remove the skins from hazelnuts after roasting?

Anonymous
Is it just about the way they look, or are the skins bitter or something?
Anonymous
You do the same for any nut.

But why?

Actually, I eat almonds with the skin. So, I guess not all. Still, just trying to figure out why for hazelnuts.

The skins usuallly add a bitter aftertaste. Most hazelnuts are used for sweet purposes, cakes and tortes.

We do it because Martha says so. She has her reasons.

You don't cook certain things with the nuts still having skins. It is very unattractive in the final products ( think about peanut brittle).

The skins are like bran. They add a lot of grittiness that you probably don't want. It's easy enough. Put hot nuts between two dishtowels and rub them around in a circular motion. Skins will come off.

Skins get stuck in your teeth.

Pain in the neck. But it does remove a slight bitterness you may not want in your final product.
