You don't cook certain things with the nuts still having skins. It is very unattractive in the final products ( think about peanut brittle). |

The skins are like bran. They add a lot of grittiness that you probably don't want. It's easy enough. Put hot nuts between two dishtowels and rub them around in a circular motion. Skins will come off.
