Asparagus Soup...make this!

This soup is very quick and easy to make. I normally make modifications, but not with this one. Followed the recipe to the letter and Oh. My. Gawd!

It inexplicably tastes creamy and there is very little dairy in it. DH made a suggestion i might tey next time...using leeks instead of onions. I bet that would be great.

OP here, let me know how you like it.

I will say i ran it all through my vitamix and half of it i then poured through my sieve and the other half i just mixed in as blended. Didn't want to lose all the fiber. Was an easy meal...served with those frozen costco salmon burgers ( without any bun just plain) and good crusty bread.

I forsee this soup served a lot this spring!

I made it today. I did add a couple of stalks of celery. Also used my vitamix/did not need to sieve at all.

Next time I would add 1 large peeled potato to give it a little more body. But very nice, even without it.

I added a little bit of crabmeat along with the asparagus tips, some sour cream and a dash of finishing salt.

Made this tonight. THIS WAS DELICIOUS!!! I took your advice and followed the recipe. The beauty of this is in the deliciate simplicity.

I made this soup tonight! We lovec it! I wanted to come back and thank the OP for the recommendation.

I made some minor modifications: olive oil instead of butter, vegetable broth in place of chicken broth, and I omitted the cheese.

It was so delicious and bright tasting. I'm going to make it for my birthday dinner next week!

I've been meaning to make this and finally did last night. I was certain my kids would not touch it as I was making it - but they loved it. So good! Thanks OP!
