favorite low cost but healthy meals? pretty much anything we eat the same things over and over frozen veggies rice or pasta chicken or beans |

I make veggie soup, taco soup, pasta w/ frozen veggies, ground turkey and bean whole wheat tacos. It's not hard to eat healthy on a budget you just need to be creative.

My DH is not American, and where he grew up, the meat portion of the meal was always a side instead of the main piece, so we try to do that -- make the veggie the largest portion, then the rice/bread/potato/tortilla/etc complement and then the meat portion a side. Cutting down the size of the meat has been a good thing for our budget.
We also try to eat at least two vegetarian meals a week. We do a bean/lentil meal and then a veggie or tofu meal. I've even taken savings to a new level by no longer buying canned beans, but instead cooking dry beans (in my crockpot!) at home. Buy and bulk and it saves a lot and stretches a long way. I buy frozen whole wheat pizza dough at Giant ($1 or so) and sauce, cheese, etc and make pizza at home. I load the veggies and it's a much healthier option than delivery. I am selective about the organics I buy -- most organics are for my toddler, but we try to do the "dirty dozen" and then meat/other produce when on sale. I don't feel the need to buy organic pita chips and other things of that nature. Re: tofu. I finally got my husband to like tofu by making sure it has a meatier texture. I keep it in the freezer instead of the fridge, and then defrost for 24 hrs in the refridgerator before I want to use it. I squeeze all water out of the tofu before cooking it. I've found that this produces a really nice textured tofu, if that's an issue for you. |

As the economy sinks, private vegetable gardens are growing. My neighbor and I are both planning on planting fruits and vegetables, but of different varieties, and do a co-op type thing with them. We will share everything that comes out of our gardens.
In addition my in-laws live on the water and we will get fish and crab from them all summer. We also purchase rice in 25lb bags (half Asian family). We mix meat into things, but rarely have a whole chicken breast or a steak. |
Is it pretty easy to catch enough fish and crabs for two households? |

We buy meat when it's on sale and freeze some for use later.
Ground turkey is always a good bet. Leaner than beef and less expensive, too. We do a lot of turkey tacos and turkey burgers on the grill. And I think ground turkey is buy-one-get-one-free at Safeway this week.

It is fairly easy. There are only two of them, and the know how much their grandkids love crab and fish, so they always get enough for us. |
I thought the grocery store fish were from the deep ocean or farm raised. And aren't they inspected? No? |
