That might be it. I follow a similar method and it says let boil for a full minute. I think maybe I turn the heat off but keep the pot on the burner. Sorry, but I would use fresh eggs at this point. |

I boil, add eggs, turn on the lowest setting, cook 12-13 minutes, ice bath.
Ever since I started boiling first, I've never had a problem peeling a single egg. 12 min leaves the innermost part of the yolk juuust cooked. So if you're more comfortable you can go a little longer. |
Put eggs in water. Bring to boil. Once it has boiled for a minute, turn the heat off. Rest in the hot water for 11 minutes.
Place in ice bath and peel. |
This is what I do. I don’t peel mine though. But they come out perfect and I boil eggs every week as part of my meal prep. |
