OP - to help with the ick factor of raw meat, would it help you if you wore gloves? Disposable medical or food service gloves. I use them when handling ground meat b/c I hate it getting under my nails. Seems like a box of those would be a few pennies per use and might pay for itself in handling cheaper cuts of meat. Not sure if you could use dish gloves and get them clean enough after (although if you wash them same as you would wash your hands, maybe?).

Also, as a single WOHM, you probably don't have a ton of time to cook, yet that is how you can save money on the food bill. A programmable slow cooker comes in really handy for tougher (and cheaper) meats, dried beans, etc. Save up for one, look for them at garage sales, etc. Won't help you this week, but might make it easier in the future. In theory, if your oven goes low enough (225? 275? somewhere in there), you could fake it with a well-sealed dutch oven, but it will take more electricity than the slow cooker.

Target egift cards can only be used for target.com. Does anyone know a grocery store that allows sendign electronic gift certificates for use at brick and mortar stores?

Many Target stores have food--at least all the ones near us. If not that, at least she can use them for other things and free up money in the future for groceries, right?
