Interesting! Lasagne is basically re-heated food (and chilled and reheated again and again). I'm going to start my process earlier and cook the noodles and chill them for the next day assembly. Also alternate with zucchini.

Re: how to cook for yourself and others, think of it like vegetarians do, except you will eat protein and veg, they will have starchier side. You make them pasta, you zucchini noodles, everyone has Raos and meatballs or meat sauce. Make batches of meatballs and freeze on weekends, can be as simple as beef, turkey or chicken, all with some egg and spices. Bake and bag them in batches. You make meatloaf and have green beans, they have both and a small baked potato. Again, bake 2 or 3 so you will have in freezer (freeze sliced) for busy nights. Everyone has steak and grilled veg, they have garlic bread on side. Easy. I'd get a CGM from your doctor, it is very helpful re: behavior mod when you can see how starch and sugar impact your blood glucose.

There are literally hundreds of thousands of websites dedicated to low carb, low sugar, low FMOP, keto. I can't believe you are having trouble.

Exactly. You can eat whatever you want if you cover it with insulin, but it better outcomes if you make reasonable food choices when it comes to the quality of carbs. Can you have a coke if you have T1D? Yes, but you shouldn't.

I’ve heard this too. I don’t know why people think this is crazy. It’s fairly well established that reheated pasta lowers its GI. However, how it impacts your personal blood sugar is a different question and should be explored individually.

Probably just stuck in a rut of giving the same advice over the years.

It doesn’t mean that an individual patient can chow down on reheated pasta. It does mean that the science is there and can at least be discussed.

You are referring to Type 2 when you say you can reverse. Cannot reverse Type 1. People need to make it clear.
