Breakfast options for working parents

bagels, the frozen lenders kind
Eggos - can't beat them - not alot of crumbs. Agree with PP - don't let the kids know there are topping options.

Also, bran muffin mix, but put in applesauce instead of the liquids and make in mini muffin pans. These freeze pretty well, but we never have enough left to worry about that. I also, (gasp) put in carob chips.

Thinks there's any chance that our kids will reach age 7 (the age of reason) and discover that sugar, animal fat, and "bad carbs" exist in the world? That they'll dive in face first and never eat another flaxseed tofu anything again? I've lately been allowing my kid to integrate more junk into his diet because of the forbidden fruit factor.

My mother was a pure brown bread hippie. My brother and I used to take our allowance to the grocery store and buy "wonderbread" and eat it on the way home, and then hide the bag in the trash. Forbidden fruit is SO SWEET!

Personally, I love McDonald's sausage biscuits (and if you live out west, the breakfast burritos at Carl's Jr. are wonderful.) But they're really probably the least healthy meal out there.

I do make whole grain pancakes from scratch and put them in the fridge or freeze them--if you have a griddle and can make more than one at a time it's not bad. Sometimes I mix up the dry ingredients in ziploc bags in advance so all I have to add is the egg, milk, and oil in the morning. This recipe can also be used for waffles--just do 1/2 cup of oil instead of 2T. Sometimes we dump in cinnamon too.

1.25 cups buttermilk (or add 1 T vinegar or lemon juice to milk and let sit a few minutes)
1 egg
2T vegetable oil
1T honey or sugar
1/2 cup oatmeal
2/3 cup King Arthur's white whole wheat flour
2T toasted wheat germ or flaxseed (optional)
1/2 tsp baking soda (may need more in DC, I make this at 6000 feet)
1/4 tsp salt.

mix wet ingredients, add dry ingredients, let batter sit several minutes before cooking so the oatmeal softens up a bit.

I whisked together the egg, milk, salt and pepper like usual, popped it into the microwave in a small pyrex container. I nuked it on 50% power for less than a minute and a half -- sorry I can't give you the exact time, but I was watching it as it cooked, and I stopped it before the timer went off. It cooked amazingly fast, I'd guess in less than a minute. It was a tiny bit overdone, but DD didn't mind.

No nasty egg-y pan to clean up! DD's favorite food done in record time! I'm feeling pretty good about this! (I know I need to get a life . . . )

waffles and fruit. On the weekends, we make eggs. We keep it simple in the am. My son could live off watermelon and grapes!

If you do nut butter, toast with nut butter and jelly is a perfectly acceptable "car breakfast" for those days when you just can't get it together to feed folks before you have to run out the door. I've used a gingerbread man cookie cutter to make "toast guys." Yoghurt tubes are fun, too, and are great frozen.

I have a just turned 2 yr old. I do a combination of any 2 of the below, plus some seasonal fresh fruit:

-Cherrios with milk
-Scrambled Eggs
-Fruit Smoothie (banana, frozen strawberries, mango, plain yogurt, honey, & ice) in the Magic Bullet.
-Whole Wheat pancakes (made ahead from scratch, fruit added, & frozen)
-Instant plain oatmeal with sliced apple and cinnamon added in

I try to fill my son up with a huge healthy breakfast. IMO, his daycare feeds the kids junk and I want to get as much whole nutritious food into him as possible in the AM.

i also do as much prep at night as possible (ie wisking the eggs, slicing fruit, and even pouring the bowl of Cherrios and placing the utensils on his placemat)

ANYTHING but the high-sugar kiddie cereals! So glad to see that no one has mentioned those here.

That is for us, and pop tarts too!

That is hilarious! One of these days I'm sure I'll find a McD's bad stuffed behind a bookshelf.

I preheat the oven when I awake in the morning and pop a tray of tater tots/hash browns in the oven while I shower, get ready, get eveyone else ready, etc.

I allow the tots to cool and divide them up into plastic cups so the kids can eat them in the car. I don't even off the option of ketchup to avoid sticky hands and potential messes in the car.

...this is in addition to cut up fruit (apples, bananas, kiwi, etc.) that I slice up the night before. If you soak the apples and bananas in lemon or orange juice they won't turn brown and look so "gross" to the kiddies.

- I also bake mini muffins (fresh blueberries if on sale) otherwise bran or lemon poppy where I sub. the oil for applesauce. I usually do this on Sunday night and refrig. or freeze the extra.

That is how we manage a healthy start to the day...
