Help me Plan Dinner: Pasta Ideas (not tomato sauce)

My kids love pasta, but not always tomato sauce. What are your favorite quick pastas that don’t use tomatoes?

We do pesto, Alfredo and scampi here and there. Any other flavor combos or riffs? I’m desperate for something new!!

Rose sauce—cream and Goya Spanish style tomato sauce
Blue cheese-Gorgonzola and cheese (good with mushrooms)

Gorgonzola pasta sounds amazing! My kids would lose it but I’d love it….

I love the tomato/feta tiktok pasta, that's normally my quick go to that isn't just "tomato" sauce, but does contain tomatoes.

Aglio e Olio is a garlic/olive oil which is delicious and super quick.

Gochujang butter is delightful if you like a little kick.

Not quick, but a nice bolognese that you cook for a long time can freeze easily and be defrosted for a quick dinner! I always make a huge amount because it takes so long, but is relatively easy. Pack in the freezer and good to go.

I do a brown butter sage sauce with spinach cheese ravioli

Mark Bittman's Pasta with Sardines, Breadcrumbs and Capers (I skip the capers) is sooooo good.

Boil some pasta while you toast 1/2 cup breadcrumbs in olive oil. Then scoop out the breadcrumbs and fry a chopped onion in the oil. When onion is browned, add two tins of sardines and the zest of one lemon until heated through. Toss the cooked pasta in the sardine mixture, sprinkle with bread crumbs, and serve with a squeeze of lemon juice.

If your kids are squeamish about fish scales and bones, I recommend the tins of King Oscar boneless/skinless sardines.

Yup, this one. After eating Aglio e Olio my kids rarely eat tomato or cheese sauce pasta.

Carbonara is one of our favorites! Use a bit of the pasta water to temper the egg yolks before mixing them into the pasta, it really smooths it out.

Sliced sausage, bell peppers, and spinach with bowtie pasta is another hit. With or without tomatoes .
