Quick healthy meals

I recently got promoted and will be working much longer hours. I still want to be able to cook for my family regularly but will have less time to do so. What are some quick healthy dinner recipes you can share?

Using canned black beans, tomato paste, and spices, a chopped onion if you have time, you can make a real quick and healthy bean burrito. Add chopped romaine, salsa, sour cream, cheese, premade guac…comes together super quickly.

Sheet pan salmon with veggies on the same pan. Easy to vary the seasonings and veggies, but my most common method is salmon, asparagus and baby potatoes in a lemon garlic butter sauce.

1.25-1.5 lbs salmon
bundle of asparagus
mesh bag of baby potatoes (I like yukon golds best)

Peeheat oven to 400 deg. Snap tough tips off asparagus and slice baby potatoes in half. Cover a baking sheet with parchment paper or aluminum foil, toss potatoes with evoo, salt and pepper and roast for 15 min.

Meanwhile toss asparagus with evoo, salt and pepper and sprinkle salt and pepper on salmon. Drizzle the salmon with a mix of melted butter, lemon juice and garlic (I use about 2 pats of butter, the juice of a lemon and a couple cloves of minced garlic).

After 15 min, remove baking sheet from oven, push the potatoes to the side of the sheet and place salmon in the middle and asparagus on the other side. Bake another 10-15 depending how well done you like your salmon.

Taco Tuesday - ground turkey, taco spices, add: diced onion, can of black beans, corn (frozen or canned), can diced tomato

Quesadilla - with refried beans or canned beans and cheese, with spinach and cheese, with rotisserie chicken

Pasta, jarred sauce (Raos), use pre-made meatballs, steam some veggies

Pizza on pita or Flatbread or pre-made Trader Joe's dough

I hate chicken but my family eats it a lot. I thaw frozen chicken tender the night before, add seasoning (I cheat with premade packets fajita seasoning for example) and marinate during the day. They go on the grill, cook in about 8-10 minutes. Make a salad or veggie and rice or other starch. Dinner usually ready in under 30 mins. Salmon or other fish is another quick and easy protein, salmon is very hard to mess up.

We do salmon with orzo and peas almost every week and it takes 20 minutes. Heat grill or oven. Put water on. Put salmon on grill or oven. Put orzo in pot. One minute before pasta is done add frozen peas. Drain orzo with peas then add butter and grated parm. We use the pre marinated salmon from Costco but you could do any sauce on it.

Black bean and cheese quesadillas with chopped mini tomatos and guacamole. I smash the black beans on the tortilla with a fork and fry in olive oil. Whole dinner is done in 10.

Shrimp scampi is also super quick.

Really depends what your kids will eat but stuff like frozen peas is great because there’s no prep. If we don’t have enough veg on table I just add baby carrots or make a fruit smoothie with frozen fruit.

Cooked grains always on hand, cooked lentils or other beans. Make a bowl with vegetables or lettuce, chicken or salmon, and toppings. I cook a batch of grains every weekend (and use canned beans heh heh!)
