Is there a science behind what was going on with my oven?

This evening I was cooking bacon on one pan, and roasted potatoes on another. I had set the oven to 450° and popped them in, then went off to take care of some laundry. I came back to check the bacon would be noticed the oven temp was stuck at 370°. Weird. I checked and it was in fact set at 450° yet hovering at 370°. It stayed there until the bacon was done. I took the bacon out, and within one or two minutes, the oven alerted that it had reached temp (450°) and it stayed there like normal until the potatoes were done.

What would have been going on that it was prevented from reaching temp while the bacon was cooking?

You probably have a faulty sensor and the dramatic temp drop after opening the door to get out the bacon made it read the temperature again.

You have a intermittent bad ground in the temperature sensor circuit.

Do not even think about switching back to gas.
