I have to eat low carb for medical reasons. This has been fairly depressing to me.
Recently though I tried something I loved. My family loves enchiladas and rice and my kids had been begging for it. I bought everything to make it but was sad that it really wasn't going to be an option for me. But I thought about how I could use some of the enchilada filling and decided to roast cauliflower. I put the roasted cauliflower and enchilada filling in a casserole dish with cheese melted on top and it is so good! For once I don't even feel like I am missing out. Any other tips for making food low carb but not depressing? I'm learning as I go but would love any ideas. |

Cauliflower rice if you had something sauce-based to go over rice (like curry or something).
I really like spaghetti squash. I make a stuffed cabbage casserole (version without rice) and don't feel like I'm missing carbs when I eat it. |

There are zero or low carb tortillas that are pretty good. If you can do portion control there are also low carb pastas.
I make a lot of things where everyone can choose what they want. I’ll make chicken shawarma and put out a bowl of saffron rice, flatbread or naan and shredded lettuce with an option for a low carb sauce or regular salad dressing. Stir fry’s are great because it’s easy and tastier to just have the meat and veggies. |
Google keto + eggroll in a bowl. It's DELICIOUS, and super easy to make. My family gets it over brown rice, I put it over cauliflower rice.
I use cauliflower rice for anything with rice v rice for my family (eg, stuffed peppers). Trader Joe's Hearts of Palm Pasta. It's not pasta at all, doesn't have the texture of pasta, but it looks like pasta. So if you make spaghetti and meatballs for your family, you have hearts of palm pasta and meatballs |
I am happy eating mashed cauliflower instead of mashed potatoes, and zucchini noodles instead of pasta, never ate much bread, but I hate not eating rice. So I eat it just once a week rather than try a substitute. |
Low carb meatballs can be delicious! Don't bread and saute them, only bake on a sheet so they don't need as much binder to hold them together. OR, sub crushed up chicarrones for the binder rather than panko/rice - this is my go to swap for meatballs, meatloaf, etc. if I need to serve a low carb guest.
Also, a friend is diabetic, and he has found corn gnocchi which he says are much better glycemically rather than regular gnocchi. |
I saw a lasagne recipe that uses egg wraps as a substitute for the lasagne noodles as a low carb, healthier option. I use chopped cabbage as a base for the Bolognase sauce that I make. I eat gluten free and don’t like the gluten free pasta options so I’ve been trying to find healthier substitutes for those. |
